Could you enable immutable releases in the repo settings?

Could you please provide a little more context? Why do you need this specifically?

I can already tell you, it's not that easy to just enable this setting. The collector has a pretty big release pipeline that arches over 3 different repos and many different collector distros released from this repo.

We also have smaller issues with releases in the last months and need to be able to manipulate tags here and there. At the very least, changing to immutable releases will need an adjustment to the current release process docs at https://github.com/open-telemetry/opentelemetry-collector-releases/blob/main/docs/release.md.
